Hazelnuts

We've just received a lovely box of local hazelnuts from Butler Farm. This year is a small harvest as hazelnut trees produce heavily one year and less the next. You can toast hazelnuts in the oven at 325?F for 12-15 minutes. The skins are tougher to get off the local nuts, but you can roll them in a tea towel. 250 grams, $10

You asked for it, and we've done it! Friday Fresh was launched February 21, 2009 and what better Fresh Sheet news than our Fresh Menus. Each week will feature a new and themed menu for your weekend entertaining or family feasting. As always, we have scratch-made pantry items ~ stocks, preserves, dried mushrooms and other quality ingredients to help your own recipes excel with great taste.
It's also a great chance to come to the kitchen meet the team- and bring your culinary questions!

Wild Mushrooms

We are delighted to now carry an assortment of wild mushrooms from One Hundred Mile Wild Foods Company, which are harvested with and dried by hand in the Interior of British Columbia. These high quality mushrooms come in 1 oz packages and come with a recipe. Currently we have porcini, roast porcini, morels, smoked morels and lobster mushrooms, as well as a mushroom mix available: $14-17

New Batch of Kick Ass Plum+Apricot Chutney!

Our Lifecycles Fruit Tree Project chutney is now ready! We received 300 lbs of plums from Lifecycles and turned them into 260 jars of chutney. Last year we sold out by February, so order yours early! 375 ml for $15 with $3 per jar going to Lifecycles.

Sweet Corn

peaches and cream or super sweet ~ both delicious and grand mixed if cutting off the cob. Silver Rill Farm has both varieties and they are always superior. Succotash, in vinaigrettes, a salad garnish or even using the humble cob to flavour a stock.

Chanterelle Mushrooms

With damper nights and some rain, the summer chanterelles have started. Golden or white/ivory they will be in season until there is frost. Many pickers have secret spots to collect. We are required to buy our mushrooms from licenced operators to ensure there are no mystery mushrooms in the mix. Chanterelles must be cooked and are wonderful sauteed with butter. One of the simplest ways to enjoy chanterelles is in scrambled eggs. Look for chanterelles on our Thanksgiving menu.

Green Figs

While late in coming, the season is here for luscious green figs. We get our figs from Le Retraite Farm near Elk Lake; they deliver these little treasures on egg trays to ensure they do not bruise. Devour fresh on their own, cut in half oven dry overnight and serve with cheese, make a compote and serve over the best ice cream , grill to heat through and serve with rack of lamb. A fresh batch of our Fig Conserve was just made on the Labour Day weekend.
